The Cheese Course offers artisanal cheeses, delicious dining menu

THE WOODLANDS, Texas – On November 4, 2014, The Cheese Course opened its doors to customers, attracting both wine and cheese lovers, as well as those who want a quick and delicious meal made with the freshest ingredients. The combination of a European-style bistro and cheese shop differentiates The Cheese Course from other restaurants, as not only can customers enjoy wine and cheese at the store complete with a full dining menu, but can also purchase their favorites to take home.

Just minutes from Market Street and Waterway Square, The Cheese Course is conveniently located at 1501 Lake Robbins Drive. The multi-faceted cheese shop offers a full dining menu, many different varieties of wine and cheeses to purchase, as well as classes on how to pair artisanal cheese with wine.

“We are a bistro, but we have our retail area and our cheese market,” said Carlos Borregales, a managing partner at The Cheese Course. “We knew it was going to be perfect because there is no specialized place like this here.”

Walking into the cheese shop, the European-style layout makes for a homey atmosphere with delicious smells coming from the bistro. Complete with dining tables to the left and cheeses to purchase to the right, customer can truly enjoy two experiences in one location. A cheese monger is always on site to greet the customers, and more than happy to give out samples. In fact, the The Cheese Course staff encourages their customers to have samples, as there are always at least two types of cheeses to try.

“We always have a sample area. If you try something you like here, you can take it home with you,” said Borregales.

At the bistro, customers can enjoy handcrafted sandwiches, soups and salads, cheese courses and even brunch on the weekends. Some of the popular favorites on the menu are the Spanish Serrano Ham sandwich, Prosciutto sandwich, tomato bisque soup, and of course, their signature grilled cheese sandwiches.

Another popular favorite are the cheese courses. Customers can have a personalized cheese course based on their preference of cheese. From fresh, bloomy, hard, semi hard, blue, and washed, there are several cheeses to choose from. Customers can then choose their accompaniments and meats to go with the course, as well as craft wine and beers.

“You can build your own cheese course,” said Veronica Rodriguez, managing partner. “You can start from one cheese to six. A lot of people come for recommendations so that they can try something new. There are so many possibilities.”

Borregales and Rodriguez both agree that there is one day of the week when cheese courses are especially popular among the patrons: Thursday. For the whole day, customers can enjoy Siply Thursdays: $3 glasses and $9 bottles of house wines, as well as $3 craft beers, and an added cheese course makes for the perfect combination.

Pairing wine with a certain cheese depends on the acidity and fat content of the cheese. Hard cheeses go best with bold, red wines, while softer cheeses tend to go better with crisp, white wines. The Cheese Course even offers wine and cheese classes each month for a fun night out, while also learning more about the various combinations.

“The class is a fun thing to do at night as a couple,” said Rodriguez.

The staff at The Cheese Course will even make a gift basket tailoring to a specific customer, making the perfect gift for a wine and cheese lover. Customers can pick from the many cheeses and wines, as well as retail items, accompaniments, and fresh baguettes to put in their gift basket.

Whether dining in or purchasing cheese to go, The Cheese Course takes pride in the fact that they provide over 150 artisanal cheeses from all around the world. The possibilities are endless and there is always something new to try at the European-style cheese shop and bistro.

“We have a high quality product with high quality ingredients, and we have a fast and casual experience,” said Borregales. “My favorite part is getting to meet all of the people.”
